Mussels Marinara

You will need

    * 2 Pounds of mussels
    * 1/4 cup of Extra Virgin Olive Oil
    * 1/4 cup of Red wine
    * 1/2 cup of water
    * 18oz of crushed tomatoes
    * Pinch or 3 of Oregano
    * Pinch or 3 of Parsley

      Mussels prep

      Fill your sink with freezing cold water and dump your mussels in agitate them with your hands to get rid of any loose dirt and such.
      Now grab a brush and scrub the outside of the mussel getting rid of any dirt, grit or beards on the shell and rinse with water and put into a bowl of freezing water. Discard any mussels that don't close tightly while in the freezing water.


Now the fun part!

   1. Combine all the liquids into a fairly large saucepan and turn the heat on high.
   2. Add the tomatoes while mixing it in with the oil/wine/water mixture
   3. While Still stirring add your seasonings (Oregano,Parsley)
   4. Cover and let simmer for 3 minutes
   5. Now add all your mussels and make sure you get them into the sauce and make sure you spread them out all evenly.
   6. Now cover and let the mussels cook on high heat, don't open the lid I know its tempting but it lets out the heat.
   7. After 10 Minutes take off the lid, and check all your mussels discard any unopened mussels.
   8. Use a large spoon with a slotted bottom to move the mussels over to a bowl and use a ladle or spoon to move over the liquid avoiding the tomatoes.

      Note in the picture below, the sauce pan I used was not big enough a 12 inch pan should do the trick.

 P.S if you want a snack later that night save 15 mussels or so and steam them in a pot with white wine for about 10 minutes. After steaming throw them into some really cold water and let them cool down. While the mussels are cooling cut up some lemon into little lemon wedges put those aside and separate the shells from the mussels so you only have the bottom half. take them out of the water and put onto a plate with the lemons, and squeeze a little bit of lemon juice onto the mussel and enjoy

I would do this for sure if i like mussels.

I do like oysters though.

if i ever get around to writing some of mine down ill post them, most of my recipes are all stored as memory, never have to write them down.
